Best Ever Ratatouille!!
I have been meal planning tonight for the week ahead and we had quite a bit of veg left in the fridge, I hate wast so i've chopped up and sauted the veggies and added a Italian style sauce and it is so yummy!
Ive used Mixed Peppers, Carrotts, Courgettes, Onions and Baby Tomatos, Added a small carton of Passatta and mixed Italian Herbs and baked for 1 hour on 150 *c. Serve with Jacket potatos/ roast chicken or add lentils for a big Italian broth! yum yum yum!!!
